The Elves at the Mattei Biscuit Factory are already working hard for You
Christmas is already in the air at the Antonio Mattei Biscuit Factory, the oldest biscuit factory in town, also known as “Mattonella” to the people of Prato. Since the end of November, the trays of Prato Almond Biscuits (known, alas, as cantucci or cantuccini) have been coming out of the oven at 7:30 AM and continue non-stop until 6:00 PM.
Although production has modernised over the years with the introduction of cutting-edge machinery and ovens, it remains partly artisanal, and the care and respect for tradition are reflected in every phase of production:
Dough preparation: Daniele and Alessio work every day to create the loaves that will become your favourite Christmas treats.
Perfect baking: The loaves travel through our 10-meter-long tunnel oven, ensuring a uniform and impeccable bake, essential for our Prato Biscuits.
Manual cutting and selection: The loaves pass one by one through an electric cutter, where Leonardo or Claudio take care of removing them from the trays. Then, Michela or Andrea carefully check each one, ensuring that only the best ones reach your table. The biscuits, once weighed and placed in the blue bags, are sealed and tied by hand, one by one. Finally, our iconic collectible tin biscuit boxes and elegant gift hatboxes are filled and sealed with artisanal care, according to our customers’ wishes.
