• Description

  A golden yellow in color, the wine is of great intensity in aroma and flavor with floral and honeyed notes along with fresher sensations which recall citrus fruit. Though still young, it is a balanced, harmonious wine.
  
  After pressing, the must fermented for 18 days at a temperature of approximately 17° centigrade (62° Fahrenheit). The wine which was obtained, still sweet, went into 60 gallon Allier and Tronçais oak barrels where it aged for six months, was then assembled and bottled.
  
  Muffato della Sala is produced from grape bunches attacked by Botrytis Cinerea picked in early November in order to allow morning mist and fog to assist in the development of “noble rot”. on the grapes. This special kind of mould reduces the amount of water in the berries and concentrates the sugar and the aromas, giving Muffato della Sala a harmonious and unmistakable aroma and flavor.
  
  Muffato della Sala is produced in very limited quantities.

• History

  The first vintage to be produced was the 1987 and was composed of a blend of Sauvignon Blanc (50%), Grechetto (30%), and Drupeggio (20%). In succeeding vintages the blend was varied until it found its present form.
  
  Castello della Sala is located in Umbria, not far from the border with Tuscany, about 18 kilometers from the historic city of Orvieto. The lands of the Castle, an imposing medieval manor, extend for 500 hectares, of which 170 hectares planted with vines, halfway between the river Paglia and the summit of Monte Nibbio.
  
  It was built in 1350 for Angelo Monaldeschi della Vipera, whose family had come to Italy following Charlemagne in the 9th century.
  
  In 1940 the Marquis Niccolò Antinori, father of Piero, became the owner of the estate with the knowledge that the area was highly suited to the production of white wines. After years of neglect, the Castello della Sala is heading towards its rebirth.
