Description
The Prato Biscuits - commonly known as cantucci or cantuccini with almonds - have been baked every day by our Biscuit Factory since 1858. They are part of the Tuscany confectionery tradition and are perfect after a meal paired with Vinsanto.
Prepared with only 5 simple ingredients: flour, sugar, free-range eggs, almonds and pine nuts, they do not contain preservatives, animal fats or vegetable fats.
Each biscuit is glazed, left to rest until the glaze is cold, and then packaged by hand.
Recommended pairings:
- at the end of a meal together with classic Vinsanto, perfect also with smooth grappa
- as a small snack, with coffee or cappuccino
Once opened, store in a cool and dry place in the same tightly closed package. -
History
Since 1858 our biscuits have been baked daily in the same rooms of the historic biscuit factory and packed one by one by hand in the classic Blu Mattei bag.
In 2015, on the occasion of Pope Bergoglio's visit to Prato, Paolo Sacchetti, multiple award-winning pastry chef and owner of the Prato pastry shop 'Il Nuovo Mondo' developed the recipe for the Prato Biscuit soaked in Vinsanto icing for the Prato pastry chef academy; all the pastry chefs of the academy, in honor of the visit to the city of the Holy Father, prepared this biscuit called precisely 'del Papa'.
Since then it has remained in our production because it is highly appreciated and requested by our customers.
This special Prato Biscuit is coated with a Vin Santo icing specially made by our pastry chefs using the prized Santa Cristina Vinsanto by Antinori. -

WHEAT flour, sugar, ALMOND 20%, free range EGGS, PINE NUTS.
May contain BUTTER, SOY, PISTACHIOS, HAZELNUTS, MUSTARD.
For icing: icing sugar, food coloring, Vinsanto. -

Notes
Considering the special vin santo icing, to guarantee the aroma, consuming them within 15 days from the production is preferable, date of expiring is on the label.
Our handmade biscuits with Vinsanto icing do not contain preservatives or colourings.
The color of the glaze may not always be the same and tending towards beige, due to the oxidation process of Vinsanto which, being amber in colour, gives the white glaze a color tending towards beige.
