History
In 2017 the collaboration between 2 Tuscan artisan organisations was established: the Antonio Mattei biscuit factory and the DAI DAI ice cream shop in Castiglioncello (LI).
At the end of the 1920s, the village ice cream man used to travel with his cart, pulled by the little donkey Dorotea, along the gravel paths and pine forest of Castiglioncello offering his chocolate-covered cream cassatine, kept fresh in an ice and salt brine. The sweet indolence of summer afternoons the little donkey also enjoyed lazily; so to start again, an encouragement was needed: “come on…come on!!!” (Dai Dai in Italian language) and the journey resumed. “Dai Dai” thus became the name of the delicious cassatina for everyone. Then came the dark years of the war to erase the time of light-heartedness and upset lives.
After the conflict, the ice cream maker resumed the production of cassatine. Dorotea was no longer there, in her place a white van, but the old incitement resounded in his mind. The years of 'la dolce vita' arrived and with them, on the beaches of Castiglioncello, the great movie stars. Among the most important entrepreneurs in the area was the Bartoletti family. Toni, at that time the procurer of the Bartoletti house, spent his childhood between the restaurant and the tennis club managed by his parents. And it was precisely in those years that he tasted the famous cassatina.
In the early 1980s, Toni worked in Castiglioncello, carrying on his parents' business in the tourism sector. The old ice cream maker was no longer there, but a desire was born in Toni: to recover the ancient recipe and give new life to the unmistakable flavour of the cassatina. Thanks to his determination, Toni managed to acquire the authentic preparation process and the production rights of the cassatina.
In 1984 Toni opened his first pastry shop in a cellar in Casale Marittimo, a small village not far from Castiglioncello. Years of hard work began for him, dedicated to the creation of new recipes, the search for important customers, the fine-tuning of the production process, carried out entirely by hand.
The Dai Dai Artisan Gelato was established and thus took its first important steps.
Today Dai Dai sells millions of delicious gelato creations every year: not only cassatina, but also nibbles, layer cakes and other delights. Always keeping true to its history and its artisan vocation.
Today at the helm of Dai Dai: Bernardo, Allegra and Rosa, inspired by the values of their father and guided by the ardent desire to continue his work in the best possible way. -
